First, eggs can be very temperamental ingredients for making omelets. You must get them fresh, organically, and keep them cold until you cook. They must be kept cool, otherwise the whites will not form properly and the yolks may become runny. Your omelets will look strangely colored if this happens. If you want to make omelets right away, it's best not to use eggs that are too cold.

Another tip is to separate your egg before adding it into the pan. You don't want the white to get mixed with the yolk, as this could cause the egg to curdle.

The egg can burn if it is placed directly on the stovetop. Instead, heat the egg for 10 seconds in the microwave before placing it in the pan. The microwave heat is sufficient to cook the egg without overcooking.
